Cheese Melts by onesmartcookie (Edmonton, Alberta, Canada)

"Every now and then my friend's mother in law invites us after work for a few drinks and nibblies. I have been asking her politely for her recipe for the one I can't stop eating. My partner won't let me freeze them and quite often I have to smack his hands before he eats them all. After she decided to break the silence she finally gave it to me! Now, my fellow bookcrossers, here it is! Try it and you'll want more!"

1/2 cup chopped black olives
1/2 cup chopped green onions
1 and 1/2 cup of old* cheddar grated
1/2 tsp. curry powder
1/2 tsp. salt
1/2 cup of Hellman's Mayonnaise
8 English Muffins, halved

Preheat oven to 400 degrees Mix ingredients well and spread onto muffin halves. Bake for 10 minutes. Once cooled, cut each half into four pieces. Freeze in ziplock bags; they are handy to have if unexpected guests arrive. Enjoy!

Really Good Breakfast Casserole by Texaswren (Whitney, Texas, USA)

"You can also add a can of RO*TEL® tomatoes (tomatoes with chilis) for added spice!"

8 to 10 large eggs (beaten)
Sausage (cooked & drained)
Large package shredded frozen hash brown potatoes
1 to 2 cups shredded cheddar cheese

Mix together, pour into a 13 x 9 x 2 in. casserole dish and bake at 350o F for 30 to 45 minutes until done.
